Can you tell yet that I'm really riled up about fall flavors? I'm trying to incorporate pumpkin into EVERYTHING. But seriously, these pumpkin chocolate chip cookies are just swell for a little snack that reminds you... Halloween is coming.

Last autumn was the first time that I'd tried incorporating chocolate with pumpkin. To be honest, the idea of it sounded so off to me... but the result was undeniably one of the best baking choices I've ever made.

Pumpkin Chocolate Chip Cookies
This recipe for pumpkin chocolate chip cookies is what autumn is made of.
Ingredients
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 1/4 cup unsalted butter, softened
- 1/4 cup brown sugar
- 6 tbsp granulated sugar
- 6 tbsp pumpkin puree
- 3/4 tsp vanilla extract
- 1 large egg
- 1 cup semi-sweet chocolate morsels
Instructions
1. Preheat oven to 350ºF.2. Whisk together flour, baking soda, kosher salt in a small bowl.3. In a medium bowl, beat together butter and sugars.4. Add pumpkin, vanilla and egg to the butter mixture until well mixed.5. Combine dry ingredients with wet ingredients until just combined.6. Fold in chocolate morsels with a spatula.7. Scoop tablespoons of cookie dough onto a cookie sheet, placing about 2" apart. Note: this will be a wet dough.8. Bake for 10-12 minutes.9. Let cool on pan for 5 minutes, then transfer to cooling rack until room temperature.
