I whipped this recipe for honey glazed banana bread up on a rainy, grey day with two browning bananas sitting on the counter. Kenneth was immersed in the Xbox, and I’d run out of episodes of Catfish… so what else does one do on a rainy day? (The answer for me should’ve been working on Atlas Magazine, but shhh. This tasted better.)
This combines flavors that I’d neglected for way too long in life. I’ve had an unspecified vendetta with banana bread for most of my life and have only come around to embracing it in the last couple of years. As for honey… I’d just always opted for peanut butter on my toast. Who knew honey could be such a game-changer in so many ways? Not only are there health benefits, but honey itself is just straight up delicious. Thus, this banana bread with a honey glaze was born.
This recipe doesn’t take too long to prepare and has a super easy cleanup. It’s dense and flavorful without the taste of banana being too overpowering. The honey glaze is a sweet balance to the heavy flavors of the bread.
