Can you tell yet that I’m really riled up about fall flavors? I’m trying to incorporate pumpkin into EVERYTHING. But seriously, these pumpkin chocolate chip cookies are just swell for a little snack that reminds you… Halloween is coming.

Last autumn was the first time that I’d tried incorporating chocolate with pumpkin. To be honest, the idea of it sounded so off to me… but the result was undeniably one of the best baking choices I’ve ever made.

From my experience, pumpkin tends to make things a little spongy. Make sure these cookies aren’t under-baked!
Recipe for Pumpkin Chocolate Chip Cookies
- 1 cup all-purpose flour
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 1/4 cup unsalted butter, softened
- 1/4 cup brown sugar
- 6 tbsp granulated sugar
- 6 tbsp pumpkin puree
- 3/4 tsp vanilla extract
- 1 large egg
- 1 cup semi-sweet chocolate morsels
